Peace, Love, and Chicken Salad

Growing up, one of the first things I ever learned to make and make well was chicken salad. I know, it's a simple dish, but there is so much you can do with it. And people are VERY particular about how they like their chicken salad! For me, I was a mayo-based salad with celery, raisins, red grapes, and curry kind of girl. No one in my house could make it except me because, of course, no one could make it correctly. There is just something about a good chicken salad sandwich that just feels like home, right?

So imagine my surprise and sheer delight when I found Chicken Salad Chick - an entire fast/casual restaurant dedicated to my beloved chicken salad. Since finding this gem a few months ago, I've eaten there a handful of times, ordering the same chicken salad each time (Buffalo Barclay - because I like it spicy - on toasted wheatberry bread with a side of broccoli salad, a pickle, and a cookie, duh). But when I got invited to the opening of a new location in Easley, SC, it was time to step out of my chicken salad comfort zone and try something new.

One of the friendly employees chatted with me about her favorite chicken salads and then brought me a delicious tasting of a bunch of chicken salads and sides. I got a lot of side eye from the table next to me - clearly jealous at my VIC (very important chick) status and all of my samples. I feel you, ladies! I'm always jealous of those people who get the last sample at Costco. But I digress.

Some of my new favorites include the Classic Carol (the salad that started it all), Sassy Scotty (with ranch, bacon, and shredded cheese), Fancy Nancy (apples, grapes, and pecans), and the Kickin' Kay Lynne.
